Breakfast Strata

Recipe for Breakfast Strata

8-10 Servings

1 tbsp butter
12 slices white bread
8 eggs
3 cups milk
1 cup cheddar cheese
salt/pepper to taste
1/2 to 1 lb browned sausage (optional)

Use butter to grease bottom of 9×13 pan
Scrunch bread to line bottom
Mix eggs, milk, salt/pepper and pour into pan
Add cheese and sausage on top
(or mix 1/2 cheese and sausage into egg mixture and use the rest on top)
Refrigerate overnight
Bake at 350 for 45-50 minutes

Chocolate Chip Cream Cheese Ball/Dip

8oz cream cheese — softened
1/2 c butter — softened
1/4 tsp vanilla
3/4 c powdered sugar
2 Tbsp brown sugar
3/4 c mini chocolate chips
 
Mix cream cheese, butter, and vanilla.
Mix till smooth. 
Add sugars.  Mix well. 
Mix in chocolate chips. 
Refrigerate. 

Serve on graham crackers.

Its Better Than Pumpkin Pie

Every time we have made this to take somewhere, people want the recipie. I thought I would post it on the internet so everyone could find it:

1 29oz can pumpkin
1 cup sugar
1 cup brown sugar
3 eggs
1 tbsp vanilla
1 12oz can evap milk
2 tsp cinnamon
1 tsp allspice
1-2 tsp pumpkin pie spice (optional)
1 box yellow cake mix (2 layer size)
1/2 cup-1 cup butter/margarine (salted)
1 cup-2 cups chopped pecans

Mix pumpkin, sugar, brown sugar, eggs, vanilla, evap milk, and spices until smooth
Pour into 13×9 pan
Sprinkle dry cake mix evenly across the top and pat down (gently)
Melt butter and drizzle over the cake mix to lightly coat
Sprinkle pecans evenly across the buttered surface
Bake at 350 for 45-60 minutes (or until lightly browned and set)
The pumpkin part on the bottom should be the consistency of pumpkin pie and the top layer should be a rich crust as the butter fused the pecans into the cake mix.
Let cool before serving and store in the fridge:)

Apple Pie

I just thought I would post how I make my apple pie (I've made 2 in the past week):

2 premade pie crusts
4 cans apples  (not apple pie filling….apples.  If you can't find normal apples, I have success buying cans of fried apples)
2 tbsp – 1/4 cup white sugar
2 tbsp – 1/4 cup white flour
1 tsp – 1 tbsp cinnamon

Mix flour, sugar,and cinnamon together in a bowl
Take the 1st pie crust and put it into a pie pan.
Poke holes in the bottom with a fork.
Sprinkle on some of the sugar, flour, and cinnamon mix.
Drain 1 can apples.
Put into pie crust
sprinke on some more sugar, flour, cinnamon mix
Drain 1 can apples.
Put into pie crust
sprinke on some more sugar, flour, cinnamon mix
Drain 1 can apples.
Put into pie crust
sprinke on some more sugar, flour, cinnamon mix
Drain 1 can apples.
Put into pie crust
sprinke on some more sugar, flour, cinnamon mix
If you have some of the sugar mix left over, it isn't a big deal.
Cut a design in the other pie crust.  You just need some holes to let the steam escape.
Put onto the pie
Cut off the extra crust
pinch the edges together with a fork
Bake in a 350-375 degree oven for 45 min (or until done).

If you want to do something with the left over crust, here is something good:

Roll it out
Spread on butter
Sprinkle with brown sugar
Roll up like a roll-up
Bake with the pie

Eat Healthy in a Disaster

This could also have applications for a hunting cabin or place of last resort. You would have to throw in a coleman stove or some other way to heat stuff up, but this could keep you going for a while.
